I should point out that I'm safely in New York. I wrote a lot on the plane, but I'm very short of sleep and have a big presentation tomorrow. I've also been working since I hit this hotel room, which was a long time ago. I found a kebab house, but was underwhelmed. In Israel, they apply hot sauce very gently with the back of a teaspoon and it still comes out dangerous, so you can imagine my initial shock when a New York Pakistani in a kosher kebab house applied it with a ladle ... and it still came out tasteless.
